Thai Style Couscous and Veggies

I took another recipe from Ambitious Kitchen and modified it a lot..mostly because I didn't have all the ingredients and did not want to go back to the store.


This turned out to be a pretty quick and easy lunch meal for us.


Ingredients


1.5 cups couscous

2.5 cups beef broth

1/4 cup natural peanut butter

1/2 cup half and half

1 tsp ground ginger

2 tsp chili powder

2-3T minced garlic

4T coconut aminos


Extras:

2-3 cups broccoli, chopped

1 rep bell pepper, sliced

1/2 cups carrots, chopped


you could use any variety of vegetables you would like*

Add garlic, beef broth, half and half, chili powder, ginger, peanut butter, and coconut aminos to a frying pan over medium heat. Whisk until well combined. Add in vegetables and let simmer for 10 minutes. Add in couscous (if using the larger couscous pearls, add these in sooner).


Stir until well mixed and until all the liquid has been absorbed.


We mixed in grilled chicken thighs for added protein as well.
