Thai Peanut Sauce

This was another recipe I found online (from Ambitious Kitchen) and then tweaked based on personal preference. It was a great way to mix up a 'simple meal' and I'll be making it again.


Ingredients:


1/4 cup natural peanut butter

2T coconut aminos

1 tsp. honey

2 tsp. apple cider vinegar

3T water

1/2 tsp ground ginger


Mix peanut butter, honey, and water in a microwave-safe bowl for 20-30s or until they are warm enough to mix together until smooth. Pour mixture into a mason jar or another jar with a lid then add the remaining ingredients. Shake until well combined. Store in the fridge for up to five days.


I added this to a bowl w/ chicken, rice, and broccoli. Makes 4-5 servings.
