Recipe: Kodiak Cake Cinnamon Rolls

I was really craving cinnamon rolls one day but didn't want to go through all the work of making them from scratch. I decided there had to be a way to make these using Kodiak Cakes so I googled a recipe and modified it to be a bit more macro friendly :) Enjoy!



INGREDIENTS

Dough:

1 Cup (106g) Kodiak Cake Mix (I used buttermilk pancake mix)

5g (a little over a tablespoon) of melted butter

1/8 tea baking powder

1/3 cup unsweetened almond milk (or any milk)

¼ tea cinnamon

½ tea vanilla

Filling:

4 tea ghee butter

30g brown sugar

½ tea cinnamon


DIRECTIONS

Preheat oven to 400*. Make dough by melting butter then adding in all the other ingredients. Mix until dough leaves the side of the bowl.

Knead dough on a floured surface until it is no longer sticky and roll out into a rectangle shape.

Spread ghee onto dough and sprinkle brown sugar and cinnamon over ghee. Roll dough into a tube, cut roll into 5 equal pieces and place together in a 8x8 baking pan. Bake for 16-20 minutes.

Top with syrup, cream cheese frosting, or a regular simple glaze (macros not included)


I did a super small batch (incase they turned out to be a disaster tbh) but you could easily triple this recipe to fill out an entire 8x8 pan and make 15-16 rolls.
