If you're eating steamed broccoli and green beans all the time, you're doing it wrong. After several years of doing just that, I CAN'T STAND eating vegetables steamed anymore. This mix took maybe 10 minutes to throw together and tastes so much better.
Ingredients
Squash
Zucchini
Bell Pepper
Onion
Salt and pepper to taste
2T balsamic vinegar
1T olive oil
Chop all the vegetables and add them to a skillet w/ the olive oil. Sauté until the vegetables just start to become soft but still have some crunch to them. Turn off the heat and add salt, pepper, and balsamic vinegar.
Let them cool completely and then store in the fridge for up to 5 days. If available, reheat back on the skillet although the microwave works too.
