Here's another comfort food, set it and forget it, type of meal. I like this chili variety as it's slightly different and super high in protein if that's something you struggle with during the day.
Ingredients
2lbs beef stew meat
1 yellow onion, chopped
8oz can tomato sauce
15oz can diced tomatoes
15oz can of chili beans or kidney beans
2 tsp. chili powder
1 tsp. cumin
1/2 tsp. smoked paprika
1 tsp. oregano
2 tbsp minced garlic
1 tsp. red pepper flakes
1/2 cup beef broth (I used kettle and fire brand)
Salt and pepper to taste
Instructions
Salt and pepper the beef then sear beef on all sides in a hot skillet. (This step is not necessary if you're feeling lazy, it just adds a bit more flavor). Add all ingredients to a slow cooker and cook on low for ~ 8 hours or until beef is tender.
Serve with cheese, tortilla chips, sourdough bread for more carbs, etc.
