Recipe: Kodiak Apple Streusel Muffins

I love making these to have on-hand for snacks, breakfast carbs, or sweet tooth fixes. You could make them without kodiak cake mix and just use flour instead; the kodiak mix just provides a little bit more protein.


Ingredients


Base

2 cups Kodiak Buttermilk Cake mix

2 apples, chopped

1/2 cup melted butter

1/2 cup brown sugar or honey

2 eggs

1 tsp baking powder

1/2 tsp baking soda

1.5 tsp vanilla

1 tsp cinnamon


Topping

1 tbsp kodiak mix

1 tbsp melted butter (or coconut oil)

1 tbsp brown sugar

1/2 tsp cinnamon


Preheat oven to 375°. Mix the kodiak mix with the other dry ingredients. Add in melted butter and eggs (if you use honey, add that here too). Mix in chopped apples. Using a 1/4 cup measuring cup, scoop mixture into a lined or greased muffin tin.


In a separate bowl, mix together the topping. Sprinkle over batter and gently press into the top. Bake for 12-15 minutes or until center comes out clean.
